It is a gloomy, rainy Sunday here in Minnesota. There is something just so comforting about Crockpot meals on rainy days. Put the food in the pot, then sit back and relax with some TV while the crockpot does all the work! That’s my kind of meal prep day!
Of course, I have other things to prep as well which won’t be QUITE as easy as the pot roast; but that can wait until a little later. For now, its Steel Magnolias and sipping La Croix while the room fills with the smell of beef broth and worcestershire sauce!
Crockpot Pot Roast with Mashed Potatoes
What You Need
1.5 – 2lb chuck roast (I used Thousand Hills, grass fed is best!)
3 cups baby carrots
4 celery stalks, diced
1 white onion, diced
1lb mini gourmet red potatoes, peeled
2 cups beef broth
1 tbs soy sauce
1 tbs worcesterchire sauce
½ tbs balsamic vinegar
4 tsp minced garlic (+ 2 for the potatoes, later.)
2 tsp garlic powder
2 tsp sea salt
1 tsp pepper
½ tsp thyme leaves
½ tsp coriander
What to Do
Toss all ingredients into a crockpot and cook on high for approximately 5 hours. *Put potatoes on top of the meat, we are going to pull these out at the end and mash them.
Once the meat is good and juicy, and full of flavor remove the potatoes from the crockpot using tongs. Place them in a separate bowl, add 2 tsp garlic and mash!
Place mashed potatoes on a plate, top with a chunk o’ meat, some veggies and enjoy! After you pour some of the juices on top, of course.

A packed fridge means we are ready to take on the week and don’t have to worry at all about eating the wrong food or feeling hungry! BOOM! A Sunday well spent.
