Hamburger & Mushroom Casserole

January 3rd, 2016 – DAMN, that is going to take some getting used to. I am most definitely that person that writes the wrong year for the first 3-4 months. By the time I finally get in the habit of writing 2016, it will probably almost be 2017.

2015 was a great year. It was full of fun, friends, and laughter. I went to Florida, Las Vegas, Ohio, and New Mexico. I watched my husband compete many times, and take home many trophies. I cheered for Landon as he took first place in his first lifting competition. My blog blew up – 3,000 views from people in 25 countries; how cool is that? I made good choices, and I made bad choice in life, in my fitness and in my diet. I smiled a lot, cried a little and continued to appreciate the amazing people in my life. Basically, I was human.

But 2015 is over. And here we are in 2016. Three days in and positive things are happening. I got back into the gym this morning to resume my deadlift training – I had taken a couple of months off because of life getting in the way, and a hurt back. It felt great to be back at it. I am also reintroducing cardio into my fitness plan this year. I am embarrassed to say that the combination of fewer gym visits combined with falling victim to holiday weight gain, lead me to gain 15lbs. Who am I kidding, I am no victim – I chose to put those cookies in my mouth!

So here are my goals for 2016:

  1. Lose 15lbs
  2. Compete in my first deadlift/bench competition in April – EEK, that’s soon….
  3. Be smarter, financially, and save money instead of wasting it.
  4. Continue to blog my heart out, and share yummy and healthy recipes with all of you!

Think I’ll reach them? I do!


Hamburger & Mushroom Casserole

What You Need

2lbs ground beef

3 cloves garlic

Olive oil

½ white onion, diced

2 cans cream of mushroom soup, organic

5 cups cooked white rice

3 cups chopped broccoli

(1) 4oz can mushrooms

1 ½ cups cheese

2 tsp garlic powder

1 tsp onion powder

1 tsp salt

1 tsp pepper

1 tsp celery seed


What To Do

Preheat oven to 350. In a large pan, brown ground beef over medium high heat. When meat is just about finished, add onions and one can of cream of mushroom soup.

Combine cooked rice, ground beef mixture and all other ingredients (except cheese), mix well. Transfer mixture into a large baking dish. Top with cheese. Bake for approximately 35 minutes.

I love casseroles. They are just too damn easy. And then you have food for days. This hamburger and mushroom casserole yields about 8 servings.
