Let’s see, what did day 5 bring? More delicious, healthy food!
Let me be really honest here when I say that so far, I am shocked at how well I have done. I have tried diets in the past, lots of them. Do you want to know how long “healthy eating,” usually lasts me? 1 day.
Something is different this time and I am not quite sure what it is but it’s incredible. I have had more self-control in the last five days than ever before. I have been more dedicated to my health in the last 5 days than ever before and this feels GREAT!
My friends keep asking me, “so when are you going to start eating normal again?” Here is what I tell them… this IS my new normal. If I am healthy and happy, and feeling better than ever… why would I ever stop? Then of course, they ask what I will do on Thanksgiving and Christmas. I have to admit, I might take a break from my new lifestyle for those two days because it wouldn’t be Thanksgiving without mashed potatoes and green bean casserole.
This is my new lifestyle and I am really excited about it.
Definitely going to have to try more recipes though. Paleo is not the kind of diet that you can not prepare for. If you don’t have food premade and ready to go, you will end up hungry because you can’t just grab the easiest thing to eat. I’m really excited for our good friend, Chris to come over on Sunday and help me cook some paleo meals for the week. That will be a fun blog to share.
As far as my eating for today…
I didn’t eat breakfast today which left me STARVING for lunch. And you know what they say, breakfast is the most important meal of the day. The problem is I wake up late and run out of time to make breakfast. So, when I got home I looked up some really great breakfast recipes that are quick and easy to make – ham & egg cups, egg casserole with sweet potatoes, coconut oil pancakes. Even just having two hardboiled eggs and some fruit would give me some energy to start the day.
For lunch, my hubby cooked up some eggs and bacon. Simple but delicious.
The new go-to for easy, quick dinner is chicken breast with sautéed zucchini and mushrooms. It goes great with a side of spinach, cherry tomatos, mushrooms and balasamic vinaigrette. Who knew that it only took as long as 13 minutes to prepare a balanced meal?
