Air Fryer Honey Garlic Salmon

Another staple in our weekly diet is salmon. Last week my stepson (19) was over as I was meal prepping and he saw this salmon come out of the air fryer. He asked about it and said it looked amazing. He said our meal prep is way more exciting than his. Not to brag, or anything.. but he’s right. What I do on Sundays is not what you might think when you hear “meal prep”. We aren’t making scrambled rice, broccoli and plain chicken. But, I am making relatively low calorie, mostly gluten free, and most importantly, delicious made ahead meals, like this one! Meal prepping doesn’t have to be boring and it also doesn’t have to be time consuming. 

When I first started meal prepping, I went a little overboard. I would cook for 4-5 hours on Sundays making all kinds of delicious but complicated and ingredient heavy meals. I’ve learned better than that. The trick to making meal prep your b*tch, is to reuse ingredients across dishes  (#1 tip) and keep it simple. You don’t need 42 different ingredients in a meal to make it delicious. Now, my meal prepping takes 1-2 hours tops and keeps us feed for the whole week.

Ok, let’s talk about this salmon.

For the longest time, my husband would not go near fish. Tuna, sure…. he could eat it. But, salmon, tilapia, walleye? Nope… not having it. I have always enjoyed salmon so when I started cooking, I started making it for myself. 

Eventually, he decided he needed to start including salmon in his diet because of its nutritional benefits and suddenly, not only was he eating my salmon but he was enjoying it! So, the salmon is a staple on our weekly menu. 

I always pair our salmon with rice. For some reason, it just makes sense. Salmon with potatoes, it’s ok. Salmon with rice, it’s delicious. I go back and forth between adding spinach and bell peppers as a side, or some crunchy delightful fresh veggies. There is something about the cool crunch of a cucumber in a rice bowl that just works. 

Every once in a while, I ask my husband what I should do with the salmon. I feel like we should switch it up from time to time, but he loves it the way it is so we keep coming back to the honey garlic salmon! I hope you love it, too!

Air Fryer Honey Garlic Salmon

  • Servings: 4

Ingredients

  • 4 skinless salmon filets

For Marinade:

  • 1/4 cup soy sauce 
  • 3 tsp garlic 
  • 2 tbs honey 
  • 1 tsp lime juice
  • 1 tsp sesame oil

For Topping:

  • 1 cup cooked white rice 
  • 1 cucumber, diced (optional)
  • 1/8 cup diced or shredded carrots (optional)
  • Thai sweet chili sauce for topping

Directions

  1. Cut salmon filets into 1 inch cubes 
  2. Combine all marinade ingredients in a small bowl, mix well. 
  3. Place salmon in a bowl, ziplock bag or Tupperware and top with the marinade. Place in the fridge for 30 minutes to 2 hours
  4. Line air fryer with aluminum foil, then add your salmon. Cook at 390 degrees for 15 minutes.
  5. Enjoy!

Don’t have an air fryer? This salmon would be just as tasty if cooked on the stove top, grill or in the oven.
