5 Ingredient Breakfast Hash

Father’s day morning means a breakfast a little more “special” than my usual scrambled eggs with bacon and potatoes.  Today, its breakfast hash.  Now, you might be wondering why that’s special. I’ll tell you…

Because I am TERRIBLE at cooking over easy eggs, and I hate doing it. But, my husband loves them so only on special occasions do I pull out the over easy eggs.

This breakfast hash is wildly easy to make, and scrumptious.  I will say though, that it is missing an ingredient.  My intention was to add some zucchini.

Now, I don’t know if you have heard about the Great Target Register Crash of 2019… but I was there. In the hour and a half between the time I put the zucchini in my cart until it finally made it onto the conveyor belt, it had gone “funky”. Ok, I admit – there’s a chance that it was funky all along and I just didn’t notice. Either way, we had to sacrifice the zucchini and leave it behind.

I think that maybe hash is supposed to be a one-pan situation, but mine is technically two to three pans. Oh well, on A Simple Dish, we follow our OWN rules!

All you need is some potatoes, some veggies, some sausage and eggs. How is easy is that?


Simple Breakfast Hash

4 medium russet potatoes

1 large green pepper

1 medium white onion


2 tsp paprika

1 tsp salt

1 tsp pepper

Olive oil



  1. Dice your potatoes, green pepper and onion while preheating the oven to 400.
  2. Toss the potatoes, green peppers and onions in a large bowl with olive oil, paprika, salt & pepper.
  3. Pour the bowl out onto a baking sheet and bake for 40 minutes.
  4. When the potatoes have about 10 minutes left, brown the sausage in a medium pan and get your eggs ready. (I added some leftover BLT bacon to the sausage – YUM!)
  5. Crack egg into a pan on low-medium heat, cook for about 4 minutes on one side then flip and cook for about 4 minutes on the other side. Repeat for desired amount of eggs.
  6. Pour the meat into the pan with the potatoes and stir. Scoop some out onto a plate and top with over easy egg(s).
  7. If you are so inclined, add some hot sauce or ketchup and Enjoy!


How good does that look? The onions get a little caramelized, the potatoes get a little crisp in the oven. SO GOOD!
