Cinnamon Apple Crisp

OK, I almost never post twice in one week, but I haven’t shared a sweet treat in a really long time so I just couldn’t wait!

You have no idea how amazing my apartment smells right now. But you could have an idea, because if you make this cinnamon apple crumble, your home can smell the same!  Is there anything more comforting than the smell of warm apple and cinnamon?

I think I’m a couple of months too late for this dish, it smells like fall. Which is amazing and painful at the same time, seeing as we are in the dead of winter. OK, I should really rephrase that to the middle of winter because it’s going to be in the 40’s this week, which is basically a heat wave for those of us in the Midwest. Break out the shorts and flip flops!

Now, back to the recipe.  Of course, I have to give the credit to my husband. AGAIN! Why does he always have the best ideas? Thank goodness he is willing to collaborate 😉

Last week, I was craving something sweet so I decided to make oatmeal chocolate chip bars. The problem was, I way under measured the honey AND they turned out too crumbly to be bars. It was really more like a very bland crumbly mess.  Hubby took one bite and said, “the texture on these are really great. It would be super good with apples and cinnamon.” And VOILA!  There you have it.  Thank you, husband, for having all of the best ideas.

What to Do

2 green apples, peeled and chopped into small pieces

1 1/3 cup quick oats

1 cup gluten free flour

1 tbs coconut sugar (optional)

3 eggs

2/3 cups maple syrup

2/3 cup honey

2 ½ tbs ground cinnamon

½ tsp baking powder

½ tsp baking soda

1 tsp vanilla extract

1 tbs ghee

1 tbs coconut oil

What to Do

  1. Pre-heat oven to 350° and line a square baking dish with parchment paper
  2. Peel and chop green apples into small pieces.
  3. Heat a small saucepan over medium-low heat and add 1 tbs coconut oil. Then add apples and let them warm for a few minutes.
  4. While the apples are softening, add all wet ingredients to one bowl and whisk well.
  5. Mix all dry ingredients in a separate bowl, then combine together.
  6. Pour the mixture into your parchment paper lined baking sheet.
  7. Bake for approximately 37 minutes. The length of time to bake will vary based on the size of baking dish you use and therefore, the thickness of the cake (it’s not really a cake, but I’m not sure what to call it). It will be done when a toothpick comes out clean.
  8. Let it cool then enjoy! Beware, this is gluten free so it will be crumbly. But there’s nothing wrong with throwing it in a bowl, drizzle it with honey and a sprinkle of cinnamon!

Two ideas to take this apple crumble to the next level…..

  • Crumble and eat with greek yogurt
  • Toss a big ol’ scoop of vanilla ice cream on top
