There’s this recipe on Buzzfeed for a NY food truck style chicken & rice dish and I made it and it was so delicious. But I thought, hmm… it’s missing something. So, I remade it with a few twists and I was SO excited to share it with you all because it turned out so great.
Then I realized, it was so good that we ate it all before I even had a chance to take any photos of it. Ugh. So it looks like that recipe will have to wait and be shared next week when I make it again. But I didn’t want to make you wait a whole week for a new post, because it’s been a couple of weeks!
So I leave you with this recipe for stuffed peppers to get you through to next week’s stellar post about chicken and rice. Enjoy!
Ground Beef & Rice Stuffed Peppers
What You Need
5 peppers, 3 green 2 red
1lb ground beef
3 cloves garlic
1 tbs olive oil
½ yellow onion, diced
1 ½ cup cooked rice
1 can tomato sauce
1 ½ tbs worchestershire sauce
2 tbs soy sauce
½ cup diced mushrooms
1/3 cup diced pepper (from the tops)
½ cup shredded cheese + extra for the tops
1 tsp onion powder
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp paprika
1 tsp red pepper flakes
Parsley
What to Do
Preheat oven to 350 and grease a glass baking pan.
Wash and prep your peppers – cut the tops off and set aside. De-seed.
Cook the ground beef in 1 tbs olive oil, diced onion and garlic.
While the meat is cooking, prep your other ingredients and place in a large mixing bowl. Use the tops of the peppers to dice up 1/3 cup of peppers.
When meat is done, add it to the mixing bowl and mix well to incorporate.
Place the muffins in the baking dish, and fill each one with the beef/rice mixture. Top with some cheese.
Bake for 30 minutes. Top with parsley, enjoy!
