Mandarin Chicken Salad

I made a really simple chicken salad a few weeks ago with only like 5 ingredients – chicken, mayo, grapes, onions and celery (and salt/pepper – but those don’t count as ingredients!) and the husband really loved it.  I decided to make another chicken salad because its so quick and easy!  It’s a snap to make and you can eat it in a tortilla, with crackers, on a bed of spinach, or straight out of the container.

And, if you’re a 13 year-old – you may even eat it right out of the microwave!

This is the funniest thing I have ever heard. Ok, maybe not THE funniest thing but it is definitely up there in the ranks.  I meal prepped on Sunday morning, then left for the afternoon. When I came home, I asked the boys what they ate during the day while I was gone. This is ritual, so I can get reviews on my recipes. Come to find out that Landon MICROWAVED the chicken salad.  My husband told him to grab a container of chicken and throw it in the microwave, thinking he would grab chicken & broccoli. Nope. So then he asked how it tasted and Lando said it was gross, but he finished the container anyway. He was so embarrassed! We were still laughing an hour later.

Now the part of this story that just melts my heart, is that even though Landon though the dish was disgusting (rightfully so, I can’t imagine microwaved yogurt dip is very good) he didn’t want me to find out, because he didn’t want to hurt my feelings! He is the most considerate kid!

But, just to avoid any confusion – DO NOT MICROWAVE THIS RECIPE. It will taste disgusting!  Don’t worry though, when eaten cold it is delish.  The hubby barely saved any for me – I only got one serving and he ate all the rest!

What You Need

4 boneless chicken breasts

½ cup mandarin oranges, cut into small pieces

½ cup pineapple, cut into small pieces

2 stalks celery, diced into small pieces

¼ cup diced red onion

Sea salt

Black pepper

¼ cup cut green onion, diced small

1 tsp lemon juice

For the Dressing

2 tbs coconut aminos

1 tsp soy sauce

½ cup plain greek yogurt

½ cup mayonnaise

1 tbs pineapple juice

1 tbs coconut palm sugar

1 tsp garlic powder

1 tsp ginger

What To Do

First, mix all dressing ingredients in a small mixing bowl then cover with saran wrap and put in the fridge.

Bring a large pot of water to boil over high heat, then add your chicken breasts. Cook about 20 minutes (until cooked through) then remove from heat and let cool.  Once cool to the couch, shred with two forks.

Mix the shredded chicken in a large bowl with the pineapple, oranges, onions, celery, lemon juice and salt/pepper to taste. Then, add your dressing and mix well again. Once mixed, garnish with sliced almonds.

Enjoy on a tortilla, on a bed of spinach or on top of crackers!
