Stupid Easy Sausage + Potato Skillet

Does anyone else miss macaroni n’ cheese with sliced hot dogs? I sure do. Mac n’ Cheese was a staple in our house growing up and one of my favorite nostalgic dishes. Too bad macaroni noodles drenched in fake cheese with slices of fake meat in it isn’t exactly healthy.

So I decided to make “Grown up “Mac & Cheese,” a stupid easy skillet meal that only takes 10 minutes to prepare. What’s better than that?

Stupid Easy Turkey Sausage and Potato Skillet

Doesn’t it look like mac n’ cheese?

What You Need

1 package smoked sausage, sliced. I used Turkey Sausage. (Turkey sausage = grown up hot dogs).

1 bag diced frozen hashbown potatoes

2 tsp cajun seasoning

1 tsp sea salt

1 tsp pepper

½ tsp chili powder

1 cup organic cheddar cheese

What To Do

Heat potatoes over medium heat in a few tbs of olive oil

Sprinkle cajun seasoning, chili powder, salt + pepper on potatoes

When potatoes are starting to soften, add sliced sausages.

Cook for about 5 minutes until sausage is heated (if pre-cooked) and potatoes are soft.

Remove from heat, top with cheese, stir well and enjoy!

Okay, you caught me. There are no macaroni noodles, and there is cajun seasoning so its really not anything like macaroni and cheese – but for some reason, it reminded me of that lovable dish. It must be the cheese and turkey sausage, gives it a hint of childhood memories in the taste!
