{ SPECIAL POST } Today’s Meal Prep – ALL Recipes Included!

If this is your first time reading, you may not know that I meal prep. Every Sunday. No excuses. What you would notice by reading back through the weekly posts, is that I often make the same thing multiple weeks in a row. This is partly because I like foods that are easy to make and also because my husband tends to like something and want it repeatedly.

I was particularly excited though about this week’s prep menu because EVERYTHING is brand new. No repeats, not one! Some recipes are mine, some were found, and all were totally successful. I probably haven’t had a no repeat meal prep weekend since I very first started prepping, a little over a year ago. Now, when trying a recipe for the first time – whether it is one created by someone else, or your very own – you never know whether its going to turn out. In my kitchen, I would say it’s a 80/20 (80% of the time, the recipe is great) but my husband would probably call it closer to a 60/40. He isn’t a fan of “creative” food and often doesn’t love my adventurous new recipes.

So keeping that in mind, this week I tried a bunch of new stuff but also stuck to things that I knew he would like aka, rice and pasta dishes. (Except the cauliflower, I didn’t expect him to like the cauliflower – but he did!).

So, I gathered up my groceries and set to prep!

So much grocery goodness right there! 

On the menu this week was:

  • Crockpot Quiche [ A Spicy Perspective ]
  • Chicken, Broccoli + Rice Casserole
  • Sausage + Cauliflower Casserole [ Paleo Grubs ]
  • Baked Ziti w/ Spinach + Meat
  • Teriyaki Beef Stew

And, the two that I didn’t have energy for today – because 5 hours in the kitchen is ENOUGH!

  • NEW RECIPE for Buffalo Chicken Salad {This one will be made tomorrow}
  • Baked Ziti w/ Diced Tomatoes, Eggplant + Feta {This is also on the books for tomorrow}

The fantastic thing about casseroles? They are super easy to make and they yield a ton of servings. The only downside for me today, is that I only have one casserole dish that was big enough so I had to wait for one to be done before baking the next. All I want for Christmas is more kitchen toys – including baking dishes, to make meal prep even more efficient. If I had two large baking dishes, I easily could have cut my cook time in ½. But seriously, we have SO much food for the week and it is all so delicious that I don’t even know what to eat first!

And, because everything turned out so yummy – I couldn’t choose just one recipe to share with you, so I am sharing them all!
