Italian Sausage and Tortellini Soup
What you need
1LB Mild Italian Sausage (I used pork sausage but I recommend Bilinskis chicken sausage)
32oz beef broth
1-28oz can crushed tomatoes
1 package 3 cheese tortellini
1 small yellow onion, diced
2 cups spinach
3 cloves garlic
1 tbs Italian seasoning
What to do
Heat a medium skillet over medium heat and brown the Italian sausage. Once browned on the outside, add 1/2 cup of water, cover and let simmer for about 15 minutes until cooked through. Once cooked, slice sausages into small pieces.
In a large stock pot, bring broth and crushed tomatoes to a boil. Add Italian seasoning, sausage, onion and garlic – stir well – then simmer, covered for about 30 minutes.
Add tortellini and spinach and simmer, covered for another 12 – 15 minutes until tortellini is soft.
Garnish with parmesan cheese, if you please!
