The Best Chocolate Chip Cookies Yet!

I don’t know if I have ever really appreciated chocolate chip cookies as much as I do now. My go-to sweet snack has always been candy bars. Probably because of the convenience of being able to find them in vending machines everywhere. I loved vending machines once. One time, I tried to bake chocolate chip cookies with my friend, Laura. Naturally, it was pre-kitchen competence, so we used one of those rolls of premade dough where really, only half the dough ends up in the oven and the rest ends up getting eaten raw.

Each time that I make cookies now, I use a different recipe. Each time, my husband says, “these are the best one’s yet!” (he is easily impressed with my baking skills) but these ones really might be the best ones yet.

This recipe is a little bit harder to try than most of the ones I have posted, solely because you may not have all the ingredients in your cabinets like I did. If you want to try them and need to shop first – go to Trader Joes. They have everything you need at a far lower price than Cub, Rainbow or Target.

Coconutty Chocolate Chip Cookies

What you need

1/3 cup coconut flour

1/3 arrowroot starch

2/3 cup almond flour, separated

¼ cup coconut palm sugar

¼ cup maple syrup

2 tbsp honey

1 egg, whisked

1 tbs vanilla extract

½ cup ghee, grass-fed butter or coconut oil

1 tsp sea salt

1 cup dark chocolate chips

What to do

  • Preheat oven to 350 and line baking sheet with parchment paper
  • Mix dry ingredients in a large bowl (- coconut sugar, and 1/3 almond flour)
  • Mix wet ingredients + coconut sugar (- egg)
  • Combine wet ingredients into dry ingredient bowl, mix well. Add in the egg and 1/3 cup almond flour and mix well, again. Then fold in chocolate chips
  • Refrigerate dough for about 5 minutes
  • Roll dough into small balls, a little smaller than ping pong balls
  • Lightly flatten with a fork to create a flat surface on the top
  • Bake at 350 for 10 – 12 minutes.
  • Let cool, and enjoy!

These turned out so good – soft and chewy and just enough coconutty! I might actually make this recipe every time going forward! Once I find a way to incorporate some protein powder for the husband of course.
