Meal Prep: Mission Accomplished

Yesterday evening, we went out to dinner with some of our dearest friends. We ate at the Butcher and the Boar in downtown Minneapolis. We have heard such good things about the restaurant so we were very excited for the good food and even better company. It lived up to its reputation – the food was plentiful and incredibly delicious. We had everything from sausages to pork loin to steak to peanut butter stuffed jalapenos (which I did not try, but I heard they were amazing) and the best french fries, fried green tomatoes and bananas foster I ever tasted. I honestly don’t know if I have ever eaten that much food before but the uncomfortably full feeling was well worth it as every bite was better than the last. Thank you so much Dawn for your generosity. It was such a lovely evening!

Now, l mentioned meat, right? I ordered a pork chop in a pineapple curry sauce, so tasty. SO GIGANTIC. This slab o’ meat was the largest pork chop I had ever seen. Lucky me, I get to enjoy it for two more meals!


The hubby and I have been kind of stuck in a rut when it comes to food and we don’t get a lot of opportunities to eat somewhere new and different. This was such a wonderful night that it got us thinking…. we need to get out more! Our new mission, try new restaurants!

I’m doing meal prep a little differently now to save money and time, I plan to prep on Sundays and Wednesdays. This should help us to avoid wasting food because I am only making enough to last a couple of days at a time. I had really high hopes for getting creative in the kitchen this weekend and unfortunately, that didn’t happen. And after #10x10s this morning (100 deadlifts… seriously…) I had zero energy to stand around mixing ingredients with a possibility that it might turn out gross. Nope. Today’s prep was all about efficiency. Quick and easy meal prep.

Scrambled eggs with breakfast sausage

Banana chocolate chip muffins

Garlic chicken stir fry with broccoli, carrots, snow peas, and celery

Leftover pork chop with garlic steamed veggies

Taco salad with ground beef, red onion, cheese, olives and tomato

Mixed greens with cranberries, pecans and feta

I went back to look at old blogs the other day and realized that I really do rotate the same things in/out every week based on what the hubby requests. I am okay with that though – healthy and delicious – we will eat until we get sick of it. I can’t believe he isn’t sick of the lasagna yet. But, I do make it a little bit differently every time so maybe that’s what keeps him interested. One of these weekends, I will spend the whole time in the kitchen creating. But this weekend was filled with too much other fun stuff.

On Wednesday, we will rock out with meatloaf, sweet potato fries, something to do with chicken sausage, and tomato/basil seasoned chicken breasts. Stay tuned!
