Easy Chicken Stir Fry

It’s been a rough week. Though I have no fun spunk left to give, I do have a yummy recipe for you!

Chicken Stir Fry

What you need

1LB Chicken, diced into small pieces

1 red pepper, cut into strips

1 yellow pepper, cut into strips

3 cups broccoli, stems removed (one bag of precut broccoli)

2 cups snow peas (one bag from the produce section)

3 cloves garlic, minced

2 ts garlic salt

3 tbs gluten free soy sauce

1/2 tsp sesame oil

2 tbs olive oil

Sea salt

What to do

  • Add olive oil to pan and let it heat up, then add your diced chicken.
  • Once chicken is almost cooked through, add your peppers, snow peas, soy sauce, sesame oil, and garlic cloves.
  • Once chicken is done and peppers have started to soften, add in your broccoli and garlic salt.
  • Turn heat down and let steam for a few minutes until broccoli is soft.

How easy was that? Very. I promise. Such a quick and easy dinner. We eat ours over rice, because I am on #teamwhiterice. Its delicious – add a little bit of soy sauce to your white rice and you have yourself something extra delicious.
