Sunday Funday

Some people spend their Sunday Fundays at the bar. Maybe watching football while eating greasy, deep fried snacks.

I spend mine preparing for the week ahead! (Though I won’t lie – I would start every Sunday with a Bloody Mary if I could.)

It isn’t always easy, committing most of your Sunday to the kitchen. The thing is, you have to sacrifice some free time in order to stay on track. I could have skipped the kitchen and gone to see Fox Catcher. But then we would have been really hungry this week! So we prep.

I have been really struggling with breakfast lately. As in, I struggle to remember to eat it. I know, I know… most important meal of the day. Skipping breakfast is shameful behavior. Here’s the problem though…. I am not a morning person. I snooze my alarm 3-4 times in the morning, roll out of bed and get ready, then go to work and start my day. I don’t talk to anyone for the first 15 minutes of the work day because that is about how long it takes for me to become pleasant.  So it is all I can handle to get up and get to work in the morning – stopping for breakfast literally never crosses my mind. Then, about 10:30am I am hit with the most malicious hunger pain in existence and then eat half my lunch. It is a vicious cycle. One that I plan to break.

So the first thing I made tonight was an egg bake that I can grab and microwave immediately following my “waking up” phase.

065To follow that, we have deviled eggs and banana chocolate protein muffins (a favorite in my household.)

For lunches, we have the delicious #againstallgrain coconut dipped chicken tenders w/honey mustard and mixed greens with cranberries, walnuts and feta. For dinner, we have buffalo chicken pasta and fajitas.

All in all, it took about 6 hours of cooking to get all of our food prepped. My only regret, food prepping today after leg day instead of yesterday. Standing for 6 hours after squats and deadlifts isn’t the most comfortable.

I would say that it was a successful one though!

Want to start food prepping yourself?

Just google recipes (I google Paleo recipes, but any recipe works!) and find a couple that you want to try. Commit to cooking two dishes in one day. I promise, you’ll like it! Two dishes per day will lead to three or four, then before you know it – you will have a variety of foods to choose from for each day of the week!

Not very familiar with cooking?

That’s ok – you can google everything! I google things like how to hard boil an egg, how to cook rice, how to boil a potato. (not joking, I googled that last one today!) You will find a ton of easy to follow instructions in the event that the recipe didn’t have the entire step-by-step process.

Give it a shot – you won’t regret it.

  1. Next step is to double recipes like the muffins and freeze to save time next week. Also trya bucket of soup for now and freeze portions for the future.
