Day 2: Starting to get the hang of this!

Well, I made it through the first 24 hours and it wasn’t that bad. Not even when I got to work and saw the large candy jar on my desk that I had forgotten was there. It also wasn’t that bad when Shawn handed me a can of my favorite purple no carb, no sugar Monster and I had no choice but to hand it back to him and say, “sorry, can’t. I’m paleo.”

I experienced a lot of hunger today but surprisingly not very many cravings. I went to work prepared. I had grapes, steamed broccoli and carrots, and a salad w/ tuna and tomatoes on hand. I got a bit of a headache in the morning and a huge energy crash in the afternoon. Guess that’s what will happen when you cut sugar and soda cold turkey. Overall, I don’t feel too bad. I think my stomach will need some time to get used to this change. It feels a bit uncomfortable right now and has since after dinner. Oh right…. Dinner. I made the most delicious wap of a scrambled egg bake ever. Mushrooms, spinach, tomatoes, sweet peppers, ham, and eggs. All I can say is I am going to love this whole omelet thing. Who needs the cheese?

I was too busy finding paleo recipes to try out, so I don’t have much to share. Except – look up sweet potato egg casserole, you won’t regret it.

So far I am pleased and excited for what the next couple weeks are going to bring!
